Module I

- Introduction to Baking

In this module, students will learn;

•    Tools required for Baking
•    How to measure wet and dry ingredients
•    Baking Conversion (Ingredient-Weight Chart)
•    Oven Temperature (Know your oven)
•    Bakeware and Pan Preparation

Module II -

Mixing your Batter

In this module, students will learn how to mix basic cake batter;

•    Vanilla Cake
•    Chocolate Cake 
•    Fruit Cake
•    Marble Cake
•    Madeira cake
•    Coconut Cake
•    cookies n cream cake
•    lemon Cake
•    Carrot Cake
•    red velvet Cake
•    Banana Cake

 

Module III -

Cake Decorating - BUTTERCREAM

In this module, students will learn how to decorate various cakes using butter cream.

•    *Preparing butter cream icing 
•    *Colouring icing
•    *Working with butter cream (Piping Techniques)
o    coupling and filling a piping bag
o    holding a piping bag
o    Torting ,filling, crumb-coating and decorating a cake
o    butter cream flowers (leaves, rose bud and more)
o    calligraphy

Whipping Cream Preparation

Module IV -

Cake Decorating- FONDANT
In this module, students will learn how to decorate various cakes using fondant.

•    Royal Icing Preparation
•    Royal Icing Pipe Work
•    * Brush Embroidery
•    *Cornelli Lace
•    * Pearls And Dots
•    *Run Sugar Pictures
•    Preparing Fondant 
•    Covering  cakes and cupcakes with fondant
•    Stacking cakes 
•    Cutting out fondant shapes and using silicone molds
•    Texturizing and embossing  fondant
•    Painting and shading on fondant

 
Module V -

Cake Decorating – SUGAR CRAFT/SCULPTING
 
In this module, students will learn how to make flowers using gum paste, a clutch purse and hand modeling fruits and people. 

•    Gum Paste Preparation
•    Basic information on Flower Making
•    Gerbera Daisies
•    Roses
•    Stephanotis
•    Calla Lily(Arum Lilies)
•    Faux Fabric Roses And Leaves
•    Curly Streamer Bow
•    Gum Paste Bows And Loops
